Slyt the shite of lekes and kerve hem smale; cole the brothe and do the lekes þerinne with oile, and lat it boile togyder yfere. Do the samoun ycorve þerin. Make a lyour of almaund mylke & of brede, & caste þerto spices, safroun and salt; seeþ it wel, and loke þat it be not stondyng.

As prepared by Beathog, to serve 6-8:
Poach 2# salmon until almost done. Reserve the salmon from the broth and set aside. Strain the broth and divide. Use half to make almond milk, and set aside. Cook 3-4 leeks in oil until soft. Add remainder of the broth, add bread crumbs and cook slightly to thicken. Stir in the reserved almond milk and season to taste with ginger, cinnamon, saffron and salt. Spoon sauce over salmon pieces to serve.
